Potato Chips

The garden today, after all our work was done.



Earlier, I had started to write "I think I over did it yesterday". I got distracted by family project time, and am now quite sure that I have over done it. My back is screaming at me. It was worth it though. We managed to move the garden and mow the yard. The dogs got taken for walks, and the 4 & 6 year old got to go ride bikes up at the court with the big kids. We had an extra 3 kids this weekend, so it's been very busy and hectic as long as the sun is up. Two of the extra kids were teens, so they were VERY helpful, and were rewarded appropriately. We had a BBQ tonight with their mom and her beau. I love it when they come to visit. You can't live in my house for a year, without becoming a part of the family.



With growing teens in the house, one must have snack foods. Ok, not just snack foods, but various kinds of salty, sweet, and junky snack foods that are consumed in any random moment not already filled with meals or sleep (as they can nibble while doing almost anything else). I heard someone mention chips, and I considered the 10 pound bag of potatoes my love brought home yesterday. I ended up using about 3 pounds of potatoes, as I had another pound or 2 soaking since last night. My Salad Shooter is great for getting the job done, and I have a fancy cut blade for that, so it was done in less then 5 minutes.



I deep fried the potatoes for 5-6 minutes at 360*, until they rustled like dry leaves when I shook the basket.





Once they are dumped out, I sprinkled them liberally with salt. The first several baskets were consumed faster then I was cooking them.





Of course, the VERY last batch was the best. The chips cooked just right, and got bubbles in them!
